Epitomising the next generation of cosy pub stays, the Black Barns at The Sir George in Jugiong – one-and-a-half hours from Canberra – were inspired by a photo of the property taken in the late 1800s. With shou-sugi ban charred cladding hiding self-insulating panels, inside you’ll find luxury flax linen, environmentally sound body products and natural fibres. When you’re not catching up on long overdue Zs, sit in the neighbouring pub and bakery, where rainwater is collected to make the sourdough, take long gorgeous drives through the countryside, or discover wine tasting in the Hilltops Region. In summer, it’s all about secret swimming spots along The Murrumbidgee.
